				<content:encoded><![CDATA[<p>I spent a few days with an old friend and per usual came home with a few new recipes. Being retired like myself, she spends some of her free time leafing through magazines collecting recipes to try. We had the usual terrible Ohio weather, snow, ice , rain and wind so food was our comfort. Let me share with you one great recipe that I was treated called Chicken Pesto Fettuccine.</p>
<p>2 cups shredded chicken breast</p>
<p>1 2/3  cups chicken broth</p>
<p>1/2 cup pesto sauce</p>
<p>10 oz. box fettuccine</p>
<p>1 tsp. lemon juice</p>
<p>1/2 cup pine or other nut</p>
<p>1 tbsp. olive oil</p>
<p>Fry chicken in olive oil until tender, add broth, pesto to skillet. .Cook pasta, drain and add to skillet. Add lemon juice. Stir a few minutes. Top with toasted nuts and serve.</p>
